INGREDIENTS

  • 130g ground almonds
  • 30g psyllium husks
  • 30g protein powder (can substitute for equal amount of coconut flour)
  • 4 heaped spoon of coconut flour
  • Nutmeg to taste
  • Cinnamon to taste
  • Mixed spice to taste
  • Ground cloves to taste
  • Pinch of salt 
  • 2 tbsp granulated sweetener of choice (can add more to taste)
  • 1 tsp baking powder
  • 4 medium eggs
  • 250 ml boiling water 
  • 2 tbsp coconut oil melted (to make it less dense and more moist)
  • handful of raisins, mixed fruits or cocoa nibs

 Prep Time: 10 Minutes Cook Time: 35 Minutes

Method

  1. Mix all dry ingredients together
  2. Add the eggs and mix well
  3. Add the boiling water and mix until evenly combined 
  4. Add the coconut oil and mix well
  5. Roll into 8 equal balls, slightly flatten out and place on a baking tray
  6. Bake at 180C/350F for about 35-45 mins until golden on the outside and cooked in the centre
  7. For the icing you can make your own icing from powdered sweetener and water making a paste.
  8. For a slightly richer topping, use melted coconut butter or any chocolate or hazelnut spread
