As we all have a bit more time to get into the kitchen, try making this banana and sweet potato bread, perfect for breakfast or snack
1 small sweet potato
3 bananas
Tsp baking soda
1/2 cup ground almonds
1/2 almond or peanut butter
2 tsp coconut flour
3 eggs
Optional ingredients:
Cinnamon to taste
Sea salt to taste
Handful Chocolate chips
Handful Walnuts
Method:
- Boil and mash sweet potatoes
- Mash the 3 bananas
- Mix bananas, sweet potato, eggs and baking powder
- Fold in the nut butter
- Add the eggs
- Combine all ingredients well until smooth (even the optional ones)
- Put mixture in a loaf tin
- Can add sliced banana on top
- Bake in a preheated oven at gas mark 4 for 50-60 mins
- Let it cool and serve
