Variation Thin rice noodles can be used instead of the udon noodles. Cheat… Use some ready-made teriyaki sauce – you’ll find it with other Asian ingredients in most supermarkets.
Ingredients
4 cod loins, about 150g (5 1 / 2 oz) each (use sustainable cod)
250g medium udon noodles
4 spring onions, sliced
1 handful fresh coriander, leaves only
Sauce
1 tbsp soy sauce,
1 tbsp honey,
2 cm fresh root ginger, grated
1 pinch sugar
1 tbsp mirin or dry sherry,
4 lime quarters, to serve
Method
1 Preheat the oven to 200°C (400°F/Gas 6).
To make the teriyaki sauce, put all the ingredients in a bowl, and mix well. Pour all over the fish, and leave to marinate for about 10 minutes.
2 Sit the fish pieces with the sauce in a roasting tin, and bake in the oven for about 15 minutes, until the fish is cooked through.
3 Meanwhile, put the noodles in a bowl, and pour over boiling water. Leave for few minutes, then drain and toss with the spring onions and coriander. Serve with the fish and a squeeze of lime.
