An amazingly quick delicious cake to pack in your picnics or take to the gym for a boost. 

Ingredients 

  • 1 egg 
  • 2 tbsp oat bran 
  • 3 tbsp psyllium husk
  • 25g ( 1 scoop) protein powder of choice ( we used plain)
  • 1tsp baking powder 
  • cinnamon or mixed spice to taste 
  • a few drops of liquid sweetener of choice 
  • handful of blueberries 
  • one strawberry finely chopped

Method

  • Mix dry ingredients together
  • Then add the egg and mix together well
  • Keep adding small amounts of water until you get pancake batter consistency mixture
  • Put it into a small oven pie type dish
  • Microwave it for 3 and a 1/2 minutes
  • Let it cool before slicing and serving  (best eaten fresh)
