A great little recipe from the festive season from our lovely Krisztina.  Carry that Christmas taste with you to work this week and back yourself these lovely cookies.


2 cups of flour of choice

1.5 tsp cinnamon

1.5 tsp ginger

1.5 tsp nutmeg

0.5 tsp salt

1.5 tsp baking soda

1 large egg

1.5 cups sugar or granulated sweetener of choice ( not powder)

3/4 cup of melted unsalted butter 

1/4 cup of molasses

For vegan version replace the egg with 1 very ripe banana and butter with plant based alternative 


  • Mix all the dry ingredient together – flour, spices and baking soda and set aside
  • Mix melted butter with 1 cup sugar, once combined add the egg, combine well and then add the molasses and mix well until smooth 
  • Gradually mix in the dry ingredients small amounts at a time until fully combined ( for the vegan version you need to rest the dough on the fridge tightly cling filmed for 30 mins before rolling and baking) 
  • Take portions of 1 slightly heaped tbsp of your cookie dough at a time and roll into balls
  • Roll each ball in the rest of your sugar
  • Place them on a baking tray with enough space for your 3 middle fingers – you can about 6 balls on a tray 

Make sure you don’t flatten them- they will spread by themselves 

  • Bake in a pre heated oven at gas mark 4 for about 15-20 mins 

Once baked let them cool down on a rack and store in airtight container.
