From Drummond Course Tutor Krisztina Biliczky
Ingredients:
- 2 eggs
- 2 large handfuls of spinach
- 150g oats ( can replace 50g with plain protein powder)
- Tsp baking powder
- Moroccan spices
- Black pepper
- 1tbsp coconut oil
- 100ml dairy free single cream ( can use dairy)
- 4/5 slices of thin ham chopped to small pieces
- Finely chopped yellow pepper
- Cherry tomatoes
- Hard cheese of choice to grate on top
Method:
- Blend all ingredients expect ham pepper tomatoes and cheese
- Add the chopped yellow peppers and half the chopped ham to the bottom of each muffin case ( you will need 8-10)
- Pour the blended mixture on top
- Lay the thinly sliced cherry tomatoes on top
- Bake in preheated oven on gas mark 4 for 20 mins
- Then take out and add grated cheese on top
- And bake for another 10-15 mins
- Let it cool and serve
