Ingredients: 

  • 2 eggs
  • 2 large handfuls of spinach
  • 150g oats ( can replace 50g with plain protein powder) 
  • Tsp baking powder
  • Moroccan spices
  • Black pepper
  • 1tbsp coconut oil
  • 100ml dairy free single cream ( can use dairy)
  • 4/5 slices of thin ham chopped to small pieces
  • Finely chopped yellow pepper 
  • Cherry tomatoes
  • Hard cheese of choice to grate on top

Method:

  1. Blend all ingredients expect ham pepper tomatoes and cheese
  2. Add the chopped yellow peppers and half the chopped ham to the bottom of each muffin case ( you will need 8-10)
  3. Pour the blended mixture on top
  4. Lay the thinly sliced cherry tomatoes on top
  5. Bake in preheated oven on gas mark 4 for 20 mins
  6. Then take out and add grated cheese on top
  7. And bake for another 10-15 mins
  8. Let it cool and serve
