A wonderfully wholesome recipe from resident foodie Krisztina!!

Flax seed bread 

Ingredients

  • 2 cups ground flax seeds
  • 1tbsp baking powder
  • 2 tbsp cinnamon
  • 6 eggs
  • 1/2 cup coconut oil
  • 1/2 cup water 

Optional toppings

  • 1 tbsp maple syrup 
  • 1 tsp cinnamon
  • 2 tbsp crushed walnuts 

Instructions 

  • Mix flax seeds, cinnamon and baking powder together well 
  • Beat eggs to smooth and fluffy
  • Add water and coconut oil to eggs and mix well
  • Combine dry and wet ingredients together thoroughly
  • Add to a baking tin and add toppings if you want 
  • Bake at gas mark 4 for 30-40 mins 
  • Let it cool before serving

Note:

Can make a savoury version by replacing cinnamon with some salt and pepper and can use sunflower and pumpkin seeds for topping.
